  • 225 g cream cheese, softened
  • 30 g powdered sugar
  • 1 tsp vanilla extract
  • 240 ml mixed fresh fruit (e.g. strawberries, blueberries, kiwi)
  • 60 g chopped nuts (optional)
  • 1 tsp cinnamon sugar (for sprinkling, optional)

Method
 

  1. Make the cheesecake filling: In a mixing bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth and fluffy.
  2. Spread the cheesecake layer: Spread a thin, even layer of the cheesecake mixture over each tortilla, leaving a small border around the edge.
  3. Prep and arrange the fruit: Slice larger fruits into thin pieces and scatter across the cream cheese layer.
  4. Add nuts for crunch (optional): Sprinkle the chopped nuts evenly over the fruit if using.
  5. Roll tightly for neat slices: Roll each tortilla tightly from one edge to the other.
  6. Slice into bite-sized pieces: Slice each roll into 1–1.5 inch pieces or leave whole.
  7. Chill or serve right away: Serve immediately or refrigerate for 10–20 minutes before slicing.

Notes

For best results, use fresh, firm fruits, and avoid overfilling the tortillas. Chilling the roll-ups allows the flavors to meld and makes slicing easier.
