Ingredients
  

Cookie Cake
  • 170 g butter, softened
  • 100 g brown sugar
  • 100 g sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp vanilla
  • 190 g flour
  • 0.5 tsp salt
  • 0.5 tsp instant espresso powder
  • 0.5 tsp baking powder
  • 0.5 tsp baking soda
  • 100 g semisweet chocolate chips plus extra for topping

Method
 

  1. Preheat the oven to 375° and lightly grease a 9-inch springform pan or cake pan.
  2. In a medium bowl, cream the butter, brown sugar, and granulated sugar together, beating well for about 60 seconds.
  3. Add the egg, egg yolk, and vanilla to the bowl, and beat until combined.
  4. In a small bowl, whisk together the remaining ingredients (except chocolate chips) and add it in 2 batches to the creamed butter, beating just to combine.
  5. Stir in the chocolate chips and press the dough into the prepared pan, flattening it evenly. Scatter extra chocolate chips on top.
  6. Bake for 23-27 minutes, until the middle is slightly underdone. It will set up as it cools.
  7. Optional: Decorate with a half-batch of chocolate buttercream and sprinkles.

Notes

This cookie cake is a great base for decoration. Add some colorful sprinkles or a drizzle of melted chocolate for extra flair!
