Ingredients
  

Truffle Mixture
  • 120 ml peanut butter
  • 60 g unsalted butter softened
  • 42 g powdered sugar
  • 0.5 tsp vanilla extract
  • 0.125 tsp flaky salt
Chocolate Coating
  • 113 g dark chocolate chopped
  • 1 tsp coconut oil
Garnish
  • 10 g chopped peanuts
  • 0.5 tsp flaky sea salt

Equipment

  • Electric Mixer
  • Double boiler
  • Microwave

Method
 

  1. In a mixing bowl, add the peanut butter, powdered sugar, butter, vanilla, and salt.
  2. Use an electric mixer to beat the mixture together. If the butter is too soft, freeze the mixture for 20 minutes before proceeding.
  3. Scoop out 10 balls of dough and place them on a small baking sheet lined with wax paper or a silicone mat.
  4. Place the peanut butter balls in the freezer for 20 minutes.
  5. Melt the chocolate and coconut oil together using a double boiler or microwave until fully melted.
  6. Remove the balls from the freezer, and dunk each into the melted chocolate using a fork or chocolate candy tool.
  7. Place the truffles in the fridge to set for at least 5 minutes before serving.

Notes

For an extra touch, consider adding a sprinkle of sea salt or a drizzle of white chocolate on top for decoration.
