- In a mixing bowl, add the peanut butter, powdered sugar, butter, vanilla, and salt.
- Use an electric mixer to beat the mixture together. If the butter is too soft, freeze for 20 minutes.
- Scoop out 10 balls of dough, place on a baking sheet with wax paper or silicone mat.
- Freeze the peanut butter balls for 20 minutes.
- Melt the chocolate and coconut oil together using a double boiler or microwave.
- Remove balls from the freezer, dunk each into the chocolate, and drain excess.
- Place truffles in the fridge for at least 5 minutes to set.
