Ingredients
  

Cake
  • 432 g Red Velvet Cake Mix 1 box
  • 295 ml water listed on cake box
  • 3 eggs listed on cake box
  • 120 ml vegetable oil listed on cake box
Frosting
  • 454 g cream cheese frosting 1 package or homemade
Coating
  • 454 g white chocolate candy coating or almond bark
Decoration
  • 15 Red Candy Melts optional for red stripes

Equipment

  • Baking Sheet
  • Mixing Bowl
  • Skewer

Method
 

  1. Bake the cake according to directions on the package.
  2. Let it cool completely. You may freeze for about 45 minutes to speed this up or cool overnight.
  3. Put the entire cake in a bowl and crumble it up using your hands.
  4. Stir in frosting into the crumbled cake, ½ cup at a time, until it holds together when rolled into a ball.
  5. Roll the mixture into balls and place them on a large baking sheet. Refrigerate for 30 minutes to set.
  6. Melt white chocolate candy coating according to package directions, then dip each ball into the melted coating.
  7. Place the coated cake bites back onto the pan or wax paper to set.
  8. Let the bites set up in the fridge. Decorate with sprinkles before the coating hardens or drizzle with melted red candy melts once set.
  9. To drizzle, melt candy melts, spoon into a sandwich bag, clip a corner, and drizzle over each bite.

Notes

For more authentic cake bites, shape them into discs. Make sure the candy coating is set before drizzling with red candy melts.
