Ingredients
  

Cake
  • 83 g flour
  • 2 tsp unsweetened cocoa powder
  • 0.125 tsp baking soda
  • 0.125 tsp salt
  • 60 ml canola oil
  • 50 g sugar
  • 30 ml buttermilk
  • 1 large egg white
  • 1 tsp red food coloring
  • 0.25 tsp vanilla extract
  • 0.125 tsp white vinegar
Frosting
  • 85 g cream cheese, softened
  • 60 g powdered sugar
Coating
  • 340 g almond bark (or white chocolate) for coating

Method
 

  1. Preheat the oven to 350°F and prepare a cupcake tin with 4 liners.
  2. In a small bowl, sift together the flour, baking soda, salt, and cocoa powder.
  3. In another bowl, beat together the canola oil, sugar, buttermilk, egg white, red dye, vinegar, and vanilla.
  4. Slowly add the dry ingredients to the wet ingredients and mix.
  5. Divide the batter among the cupcake liners and bake for 20-22 minutes.
  6. Cool completely on a wire rack.
  7. Crumble the cupcakes. Mix with softened cream cheese and powdered sugar.
  8. Form mixture into balls and refrigerate for at least 4 hours.
  9. Melt almond bark in the microwave and dip each cake pop to coat.

Notes

Recipe is easily doubled and can be made ahead of time, making it perfect for parties.
