Preheat your oven to 350 degrees F. Line a cookie sheet with parchment paper. Set aside.

In a medium bowl, add the cake mix and baking powder. Whisk to combine.

Add in the eggs and vanilla extract. Mix together to combine. Add in the butter and mix well.

Toss in white chocolate chips and stir by hand to combine.

Use a medium cookie scoop to scoop out balls of the dough. Roll each one in your hand to form a ball before placing it onto your prepared cookie sheet.

Bake for 8-10 minutes.

Remove from the oven and, if desired, press a few additional white chocolate chips into the top of the cookies. Let them rest for a couple of minutes on the cookie sheet. Then transfer to a cooling rack to finish cooling.
