Toast
  • 2 slices brioche bread 1+ inch thick
  • 45 g Kerrygold butter divided
  • 1 tsp granulated sugar
Cheesecake Filling
  • 40 g powdered sugar can substitute honey or coconut sugar
  • 60 g whipped cream cheese
  • 0.25 tsp orange zest or orange blossom water
Topping
  • 75 g sliced strawberries fresh
  • 10 g powdered sugar
  • 1 tsp coarse sugar optional, for sprinkling

Method
 

  1. Preheat a skillet over medium heat, and add 15 g of the butter.
  2. Butter each side of the bread with the remaining 30 g of butter.
  3. Sprinkle each side of the bread with the granulated sugar before placing in the skillet.
  4. Toast the bread on each side until golden brown, about 1 minute per side.
  5. Meanwhile, slice the strawberries and toss them with 10 g of powdered sugar. Set aside.
  6. In a small bowl, beat together the cream cheese, remaining 40 g of powdered sugar and orange zest until fluffy.
  7. Remove the toast from the skillet, and top each slice with the cheesecake filling, followed by the strawberries.
  8. Optional: Sprinkle coarse sugar on top before serving.

Notes

For a twist, try using a different fruit like blueberries or raspberries. This dish is perfect for a quick breakfast or a delightful snack.
