Ingredients
  

Cookie Dough
  • 85 g unsalted butter softened
  • 50 g light brown sugar
  • 37 g granulated sugar
  • 1 yolk large egg yolk
  • 0.75 tsp vanilla
  • 83 g flour
  • 0.25 tsp fine salt
  • 0.25 tsp instant espresso powder
  • 0.25 tsp baking soda
  • 0.25 tsp baking powder
  • 80 g chopped M&Ms candies

Method
 

  1. Preheat the oven to 375°F and line a cookie sheet with parchment or a silicone mat.
  2. In a medium bowl, cream the butter, brown sugar and granulated sugar together. Beat very well, about 45 seconds. Add the egg yolk and vanilla and beat until combined.
  3. In a small bowl, whisk together remaining ingredients (except M&Ms) and add it in 2 batches to the creamed butter, beating just to combine.
  4. Stir in the chopped M&Ms. Make 12 dough balls (roll them in your hand), space them evenly on the cookie sheet and bake for 9-10 minutes.
  5. Remove from oven, and let cool for 1 minute on the baking sheet before moving them to a wire rack to cool completely.

Notes

These cookies pair perfectly with a glass of milk or a cup of coffee. Feel free to substitute the M&Ms with other candies or chocolate chips for variety.
